THE PEANUT BUTTER ADDICT'S VEGAN PIE



I posted a picture of my vegan peanut butter pie on my twitter and got the most retweets and favorites ever on any of my food tweets. This is for you especially @healthygirltip on twitter, enjoy and let me know which you liked best. I follow a few health enthusiasts on twitter and I find that we have these in common, first, we all love desserts, second, we all love vegan deserts and third we are all peanut butter lovers. I think for me peanut butter took second place once I discovered almond butter, but I won't discriminate on my first love, peanut butter dear....still love you :-)

Here are two versions of vegan peanut butter pie that every peanut butter fan will surely appreciate:

1. The Peanut Butter Addict's Vegan Pie

     1 pack firm tofu
     1/2 cup sugar (or 4 ripe bananas, mashed)
     1 cup peanut butter (or almond butter)
     2 Tbsp cacao powder (optional)
     1/4 cup soy milk
     1/2 tsp vanilla extract
     1/2 tsp lemon juice
     1 vegan pie crust (follow baking direction on pie crust box)

Put all ingredients (except the pie crust of course) into a food processor with an 'S' blend until smooth. Pour filling into pie crust and chill in the freezer covered for about an hour or until firm. Chill for about 15 minutes before serving.
 

2. Creamy Peanut Butter Pie





     1 8oz pack firm tofu (I use Nasoya brand)
     1 8oz Tofutti cream cheese
     2 Tbsp fresh lemon juice
     1/2 tsp vanilla extract
     1 Tbsp ground flax seed + 1 Tbsp water
     6 Heaping Tbsp of peanut butter
     5 Tbsp of Blue agave nectar
     1  vegan chocolate pie crust (store-bought)

Blend all ingredients in a food processor with an 'S' blade until smooth. Pour mixture into the chocolate pie crust and bake for 15 minutes at 350 in the oven. Then freeze covered (with surround wrap or foil) for about 1 hour and then put in the fridge for another 45 -60 minutes or until firm. Serve with a drizzle of chocolate sauce and some peanut butter chips. Enjoy!

Quick Chocolate Sauce:

1 Tbsp coconut oil (melted)
1/2 Tbsp cacao powder
2 tsp agave nectar

Whisk all together in a cup and voila!

While the creamy peanut butter pie was setting in the fridge, I took my little wonder with me to the mall to BUILD-A-BEAR workshop and we got back just in time to enjoy our pie with a cup of green tea. When Ricky gets back from preschool I'm sure he will want his own bear, so I guess we'll be going back to the workshop soon enough, might even make my own bear, it is such a lovely atmosphere, what a brilliant idea!

We are three moms with a passion for health and creativity who found themselves on facebook and became sisters: I can still remember how it all began but I will save that special story for another time. The 3G MOMS are, Maureen, 40, Therra, 36 and Bernice, 33. We are originally from Cameroon, West Africa. We are super creative, super innovative and do not believe in adhering to rules that stunt our passion and purpose. We are free spirits. The 3G MOMS' cookbook(s) is our very first product in the line of many. Our cookbooks are meant to satisfy the taste buds and/or curiosity  of every food lover. Vegan Veggie Pizza with Gluten-Free Crust

My friend Maureen Lermer and her three children have been on a gluten-free diet for years and I love to feast my eyes on her beautiful food photography. I have been toying with the idea of eating gluten-free myself. When I'm doing all raw of course I am totally gluten-free but when I am making some vegan foods I still incorporate some gluten in my diet. Today I decided to make a vegan veggie pizza with a chickpea crust and the result was DELIGHTFUL!

WHO WANTS PIZZA?


SO FILLING AND NUTRITIOUS I WAS FULL AFTER TWO SLICES

THIN, FLUFFY, GLUTEN-FREE CHICKPEA CRUST
 PIZZA TOPPING

Ingredients:

2 tomatoes, thinly sliced
1/2 onion, sliced into rings
1 zucchini, chopped
1 small Indian egg plant , chopped
1 tsp rosemary
1/4 tsp black pepper
1 Tbsp olive oil

Mix all ingredients in a bowl and and let marinade for about 15-20 minutes.



CHICKPEA CRUST:

Ingredients:

1 cup chickpea flour
Dash of salt
1/2 cup warm water
1 tsp yeast
1 Tbsp olive oil

First, add yeast to cup of warm water and mix. Pour mixture into bowl with chickpea flour and salt, mix until smooth and then cover and let stand on kitchen counter for 30 minutes. Uncover and  add olive oil and mix well. Pour into baking pan and place in 450 degree oven. Let bake for 10 minutes. Take out and set aside.

I  decided to use left over mango pesto I had in the fridge for my 'cheese'. Here's the recipe from an old blog entry:

CHEESE: MANGO PESTO

Ingredients

1/2 cup pine nuts
3 cups basil leaves (I used 1 bunch)
2cm ginger root
1 garlic clove
1/2 cup + 2Tbsp olive oil
pinch of salt or salt to taste
1 Tbsp fresh parsley
1 Tbsp almond butter (optional)
Juice of 1/2 lemon
2 cups ripe mango chunks
3 cups of mung beans, rinsed and patted dry

Put all ingredients except the mung beans in a food processor with an 'S' blade and blend until smooth.



ASSEMBLY:


Generously spread mango pesto over crust. Add pizza topping over the pesto and place pizza into the oven for another 5-10 minutes to warm. Serve and enjoy!







Eating healthy is a labor of love just like every worthy thing we have or strive for in our lives. Taking time to prepare your foods makes it very much easy to be grateful and appreciate life and ourselves. If you do try this out I would like to know how you liked it. Next, I will be working on making some vegan condensed milk, yup, you heard right, yummy stuff isn't it? Till then, be safe and ALWAYS STRIVE TO BE HAPPY.

D'lectable Vegan Cheesecake

I was wondering yesterday how I could make a cheesecake without my food processor :( and I decided not to give up no matter what. I was going to make my cheesecake, food processor or not! I definitely couldn't make a Raw Cheesecake because I had to grind my cashews but then I remembered that I had some Tofutti better than cream cheese in the fridge...ding, ding, ding IDEA!!! I wanted a raw crust and obviously could not make my regular raw crust without my 'S' blade food processor so I came up with a cool recipe that worked, talk about DETERMINATION!

Raw Crust

Before it went into the oven. Nina came up with the idea of decorating it like this :)

That warm chocolate sauce added another kick to it, YUMMMY

Next time I will use a smaller pan so the 'cheesecake' part of it can be thicker

I got my fix, you can have yours too :) This should keep me good for the next few weeks;)


Ingredients:

Crust:
1 cup almond flour
1 cup coconut macaroons
pinch of salt
6 Tbsp organic maple syrup (I use the organic grade B maple syrup)

Mix all ingredients in a bowl until sticky and starts to formed a dough. Press dough into an 8' pan and set aside.

Cheesecake Filling:

2, 8oz containers of Toffutti Better Than Cream Cheese
Juice of 1 lemon
1/2 cup sugar

Mix all ingredients very well in a bowl. Set aside for about 5 minutes to let flavors and sugar set in. Mix again for another 2 minutes or so and then pour over crust.
Bake in 350 degree oven for about 35-40 minutes.
Remove from oven and put in the fridge to chill for about 1 hour.
Serve with warm chocolate sauce.

Chocolate Sauce:

1 Tbsp cacao powder
1 Tbsp organic grade B maple syrup
1 Tbsp coconut oil, melted

Okay, I came up with this recipe on the spot and the whole time I was keeping my fingers crossed and hoping it tastes half decent enough to eat and not waste--If it was horrible.

VERDICT: I LOVE IT!!!

Now I can make different variations out of this. I hope you enjoy it as much as I did. Also, I warmed my chocolate sauce just a touch before drizzling it over my cheesecake, the contrast between the warm chocolate and the cold cheesecake was MOUTH WATERING!!! YUUUUUUMMMMYYY!!!

I did my hair on the eve of Christmas, took me only  5 hours
