THE PEANUT BUTTER ADDICT'S VEGAN PIE



I posted a picture of my vegan peanut butter pie on my twitter and got the most retweets and favorites ever on any of my food tweets. This is for you especially @healthygirltip on twitter, enjoy and let me know which you liked best. I follow a few health enthusiasts on twitter and I find that we have these in common, first, we all love desserts, second, we all love vegan deserts and third we are all peanut butter lovers. I think for me peanut butter took second place once I discovered almond butter, but I won't discriminate on my first love, peanut butter dear....still love you :-)

Here are two versions of vegan peanut butter pie that every peanut butter fan will surely appreciate:

1. The Peanut Butter Addict's Vegan Pie

     1 pack firm tofu
     1/2 cup sugar (or 4 ripe bananas, mashed)
     1 cup peanut butter (or almond butter)
     2 Tbsp cacao powder (optional)
     1/4 cup soy milk
     1/2 tsp vanilla extract
     1/2 tsp lemon juice
     1 vegan pie crust (follow baking direction on pie crust box)

Put all ingredients (except the pie crust of course) into a food processor with an 'S' blend until smooth. Pour filling into pie crust and chill in the freezer covered for about an hour or until firm. Chill for about 15 minutes before serving.
 

2. Creamy Peanut Butter Pie





     1 8oz pack firm tofu (I use Nasoya brand)
     1 8oz Tofutti cream cheese
     2 Tbsp fresh lemon juice
     1/2 tsp vanilla extract
     1 Tbsp ground flax seed + 1 Tbsp water
     6 Heaping Tbsp of peanut butter
     5 Tbsp of Blue agave nectar
     1  vegan chocolate pie crust (store-bought)

Blend all ingredients in a food processor with an 'S' blade until smooth. Pour mixture into the chocolate pie crust and bake for 15 minutes at 350 in the oven. Then freeze covered (with surround wrap or foil) for about 1 hour and then put in the fridge for another 45 -60 minutes or until firm. Serve with a drizzle of chocolate sauce and some peanut butter chips. Enjoy!

Quick Chocolate Sauce:

1 Tbsp coconut oil (melted)
1/2 Tbsp cacao powder
2 tsp agave nectar

Whisk all together in a cup and voila!

While the creamy peanut butter pie was setting in the fridge, I took my little wonder with me to the mall to BUILD-A-BEAR workshop and we got back just in time to enjoy our pie with a cup of green tea. When Ricky gets back from preschool I'm sure he will want his own bear, so I guess we'll be going back to the workshop soon enough, might even make my own bear, it is such a lovely atmosphere, what a brilliant idea!

Good morning Chunky-monkey-pina-strawberry-banana




Recipe:

1cup of pineapple
1 1/2 banana
3 strawberries
2 cups of soy or almond milk
2 Tbsp of flax seed
1 tsp vanilla extract (optional)

This recipe came about because i had some left over pineapple and didn't know what to do with it and I didn't want to eat the pineapple by itself. I was scared that a mixture of pineapple with soy milk might be yucky but it was actually yummy to the tommy lol. So there you go, have some for breakfast and enjoy.

Once in a while I let Nina indulge so this morning I made her some pancakes, with sliced strawberries, some chocolate syrup and lots of whipp cream, she loved it! eventhough she turned and said to me "Mommy, I feel like I'm eating unhealthy." hahahahahahaha she is too much. I told it was okay on occassion.



The ressurection of FYR is back so get ready, you don't have to wait for the New Year to begin, if you can make it civilized (lol) through the Holidays then you can make it anytime, so be strong and remember to eat and drink to your health, you will thank me later!!!

Day 36 (30-Day Green Smoothie Challenge)

My RAW-mazing COLESLAW


YOU MUST TRY THIS!

I think I outdid myself today with this recipe. I hope you all love it. I made a big batch so I have leftovers for tomorrow.
Ingredients:
1.5 cups of green cabbage, thinly sliced
1 cup of purple cabbage, thinly sliced
6 medium sized organic carrots, 3 grated, 3 julienned (or all grated)
1 bunch of cilantro, chopped
2 organic apples, chopped
Mix all in a bowl and set aside.
Dressing:
2 cups of almonds, soaked overnight
1/4 cup of agave or raw honey (I like and used agave with this one)
1/2 tsp salt
1 tsp dried mustard powder
1.5 cups of olive oil
1/4 cup coconut oil
juice of 1 lemon
juice of 1-2 oranges
Process in blender until smooth. Pour over veggies and toss.

Have You Met Your Meat Yet?

Do you recall that funny feeling after a meal of steak? Like you've just eaten a cow? Well, if you have it is because you have eaten a portion of a cow and all its barnyard Friends. Long ago I used to be very clueless meat-eater. Little did I care or know how my meat was handled and cared for. Who cares right? as long as it's FDA approved we are good to go. The FDA cares very much about us, they bring us the best of nature, right? Well, NO ONE LOVES YOU LIKE YOU, NO ONE CARES FOR YOU LIKE YOU, NO ONE IS RESPONSIBLE FOR YOU BUT YOU!

Cows are still fed feed that contains their barnyard friends like cats, dogs, fish, chicken, pigs and other cow parts. Did you read that correctly? Your MEAT is a cannibal! If that doesn't scare you, then this message wasn't for you. Let those who have ears listen; that is not only relevant for the Bible but with everything else in life. And the FDA? What do they say about this? In Michael Zenn's Self Health Revolution it says "Government spokesmen believe that whatever is processed by renders, becomes denatured (meaning it's actually no longer what it was before)"
So your Government spokesperson means that since it has undergone some kind of process to change the meat (they are heated for 30 minutes under very high temperatures), whatever it was before has been changed. What are you eating my friends? First, they heat it up in the rendering process and then you take it and heat it up some more! what are you eating? Ever imagined how eating or lets say being fed other animal parts can change the chemical composition of the animal? Ever imagined how eating that 'sick' and 'alien' flesh changes the chemical composition of you?

There is a famous saying that goes "You are what you eat." I have come up with mine and I think it is even better "What you eat, eats you."-- Most people don't believe animals have feelings but they do have fear vibrations they send out when they 'know' death is coming. Imagine what's going on in them when they see themselves on the slaughter line. I am sure they want to escape, I am sure that their adrenaline in at its peak, I am sure they have feelings, I am sure they like us, want to live, want to survive and enjoy life by playing in the grass or in the mud or just lazying around watching the sky. If "Curiosity killed the cat." I can safely say that "Ignorance kills the man."

If your problem is where to get your protein from, as so many fire back, protein is not all the craze, it will take a hard try on your part for you to be protein deficient. The body can get all its necessary amino acids from seeds, nuts and dark leafy greens. Humans are not meant to me meat-eaters but when it is packaged right and the Gorey red bleeding flesh is camouflage with seasonings and spices, I bet you it is very inviting isn't it? Sometimes it serves to be gullible and this is the one time. When I look at a piece of flesh my brain goes on alert mode and I am very grateful for that, in the past I would still eat it and ignore my inner voice but that is what I called denial. If you were sent out there with a spear in one hand and asked to go get your own meat or chicken or pig, would you? I think you would run the other way. Why then do we let others do the dirty work for us? so we don't feel the guilt because we didn't kill the animal? so there is no blood on our hands?

Did you know that the two leading causes of death in the U.S are directly related to meat consumption (cows, Turkey, pigs, chicken, fish etc)

"Patrice Green, J.D., M.D. and Allison Lee Solin state that animal products easily account for our largest intake of pesticides and herbicides, in fact, more than 80 to 90% by some estimates."--Self-Healing Colitis & Crohn's by David Klein, Ph.D.

"One half of all antibiotics in the U.s. alone are used in the production of livestock." Here are a few facts from Dr. klein's book:

Meat is the most putrefactive of all foods. This means of all foods meat is the most liable for decay in the intestines.

The hardest thing for the human body to digest is cooked animal meat.

Protein metabolism yields great amounts of toxic byproducts.

Flesh food can take up to 5 (five) days to pass through and out of the body (Plant food takes about 1 day).

Meat contains waste products that the animal did not get to eliminate and toxic hormones and fluids released into their blood stream at the time of death.

This may sound extreme but it is the truth and the truth usually stinks or should I say stings; when you look at your steak, chicken, pork the next time you're eating start to think:

Hello meat, how were you cared for? how long have you been dead for? hat sores, cancers or diseases did you have before you were slaughtered? Ask, Ask, Ask and maybe one day you will ask yourself if it is really necessary to eat flesh that you yourself wouldn't go out to kill or slaughter.

Did you know that bowel cancer is the second form of deadly cancer after lung cancer? What causes or puts you at risk of having this? answer: just go back and read from above.

I think I've written enough for today. There are many books and resources out there about animal protein, make use of them all and if you still want to eat animal flesh do so knowing what you are ingesting. It is GOOD to be in the know.

Day 7 (30-Day Green Smoothie Challenge)

FROM MY KITCHEN TO YOURS: MY CuCuMbER Smoothie

Rise and shine, rise and shine! Hello world, I hope you are feeling just as wonderful this woman typing these words, lol. I feel FABULOUS :-)
Today is a great day for a great cucumber smoothie don't you think? I am amazed that I don't feel hungry at all. Did you know that when you're feeling hungry 90% of the times you are just really thirsty and that a glass of fresh water with slices of lemon would do the trick? Talking of water, I think it is fair to say many of us take water for granted. What I mean is if you're not loving your water and hydrating your body, you are taking water for granted. Someone once told me that they went a week without drinking water because they don't like water. Some people feel the need to add powdered, sugar-packed substances to their water to give it a zest.

Think about those who would do anything just for a glass of water to quench their thirst. For many of them that would be a great breakfast, lunch or supper. They definitely don't take water for granted, they value it like the air they breathe. So when next you shy away from water, think about those children who have none--your gratitude will multiply. You can enhance your water in a healthy way by adding some slices of lemons, oranges or even slices of your favorite fruits. If that is not enough add a dash of stevia (www.sweetleaf.com)to sweeten it.
Before we delve into how important your poop is, here is my cucumber smoothie recipe.

Bernice's cucumber Smoothie

2 bananas
2 golden brown Asian pears (you can use any other type of pears you have)
2 cucumbers
2 kale leaves
2 cups of water

This smoothie is thick and slightly gritty, you will definitely enjoy it even if you're not a cucumber lover.

Did you know your stool can tell you all you need to know about your health? People who are healthy generally don't have offensive smelling stools or gas. When your stool has an offensive smell it usually means your food was not properly or completely digested and so it putrefied and fermented in in your gut. Putrefied and fermented food emits poisonous and very corrosive gases which erode the lining of your stomach and intestines. These gases are strong enough to eat through concrete pipes, think about the damage they do to you. The solution to this is proper food combining. The two common problems with stools are either constipation (compact stools) or diarrhea.

Diarrhea is the body's way of eliminating toxins from the body, so don't try to suppress it with medications unless it is severe. All you need is lots of rest, water and fresh fruit juices.

Constipation is a sign of eating improperly. Your diet may be too low in fiber, water and/or you're eating too many fatty and starchy foods. You can reverse this by doing just the opposite.

The colon is a great health indicator, a clean colon makes a happy person and an unclean colon is breeding ground for disease. Again, like water, do not take your colon for granted. Don't take your health for granted make it your personal business to see that you're doing the best to live an abundant life free of illness and disease.

Wao! I am on day 6 already and feeling as light as air. I feel full yet I don't feel that heaviness you feel when you're on the SAD (Standard American Diet). I had a 20 minutes walk today with my God. I always meditate when I walk or jog, I have on my earpiece and I listen to "Worship Together" I love listening to "Above All", keeps me focused and keeps my mind at peace. You can choose which ever way you want to stay focused, I find that this helps me most. I drank lots of water yesterday and my pee has no color, well sometimes a barely noticeable yellow hue and definitely no odor (sorry if I am grossing you out but I am just being truthful. That is what my daily diary entry is all about; the changes in my body when I'm on raw food).

I find that I've become more patient and I smile more, it's less about me and more about others, I watch them, listen and make them comfy. It is great to hear someone say "You've brightened up my day" or "There's something about you that shines." I heard this compliments before i started the 30-day journey but it's always nice to hear them again and again knowing there's something really 'shining' inside me (my insides, lol more precisely, my colon :-)).

This is what I made for smoothie today:

2 bananas
5 kale leaves
2 handfuls red seedless grapes
1.5 cups of water

You can always freeze your fruits a few minutes before you blend them, that way you get the cold, frothy smoothie you like.

I have a lot of cleaning to do today so I must say tata but I will be back tomorrow with some great insights about what your poop says about your health.

I'm in 'raw' heaven!

FROM MY KITCHEN TO YOURS: Bernice's Walnut Pâté

I'm sure everyone can sense my excitement. Doing this 30-day green smoothie challenge has become the most exciting thing I've undertaken in a while. It is as though my taste buds are 'waking' up from sleep. All the natural, tantalizing tastes of individual ingredients seem to send my senses into a beautiful frenzy. I appreciate the taste of food and the feeling it gives me. Experimenting with different recipes is so much fun. I didn't realize there are so many things one can do with so little ingredients. Ah, I am in Raw heaven for real, lol. I can't help the feeling...you wouldn't if you tried what I made this afternoon.


Bernice's Walnut Pâté
(Can be used on a garden salad or in a sandwich)

Ingredients:

1.5 cups soaked walnuts ( I soaked mine for 6 hours, but you can do a couple of hours or overnight)
2 Tbsp fresh lemon juice
2 Tbsp extra-virgin olive oil
1 tsp Bragg's Aminos (you can use tamari if you have some)
1/4 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp curry powder
1/4 tsp thyme
2 garlic cloves
dash of salt
2 Tbsp freshly chopped parsley
2 Tbsp chopped onions
1/2 green pepper

Method:

Place nuts, lemon juice, olive oil, Bragg's Aminos(or tamari), garlic powder and salt in food processor and blend. Then add parsley, onions, garlic cloves and green pepper and blend. You can blend into a paste but I like to chew on some almonds so I blend for about 1 minute. A generous scoop of this on my garden salad was all I needed and I stored the rest in the refrigerator for later.
p/s I added some half an avocado in my salad and then dressed the salad with my Walnut Pâté. This is so filling you wouldn't even believe it and it's all raw and healthy, who would've thought it?

Let it be known: THIS IS THE BEST SALAD I'VE EVER HAD.

Day 5 (30-Day Green Smoothie Challenge)

FROM MY KITCHEN TO YOURS: Bernice's Creamy coconut butter with tempeh

I am constantly amazing myself, yes I am. Last night I created this wonderful recipe for Rick and Nina. I am not doing cooked food but I do cook for them. In Rick's own words "This is by far one of the best tasting foods I've ever eaten." and my husband is a phenomenal cook. So I am going to start by sharing my beautiful recipe with you.

p/s I did save some in a container for the freezer, that way I can try some when my 30-day challenge is over :-)

Bernice's Creamy Coconut butter with Tempeh

Ingredients:

1 can 13.5 oz organic coconut milk
2 Tbsp almond butter
2 Tbsp extra virgin olive oil
1 Tbsp peanut butter
1/2 tsp sweet basil
1/2 tsp black pepper
1/8 tsp garlic powder
1/2 tsp curry powder
1 Tbsp agave nectar
1 pack 8oz organice garden tempeh
1/4 green pepper, thinly sliced
1 cup of water
1 cup of quinoa

Method:

In saucepan on medium heat, add olive oil and coconut milk. Stir in almond butter, sweet basil and black pepper. Add garlic powder and curry. Then add 1/2 cup of water and then add peanut butter and mix evenly. Add agave nectar, cover pan with a lid and cook for 5 minutes. Add tempeh and the rest of the water and let cook for another 15 minutes. Add thinly sliced green pepper towards the end for a more crunchy taste. This make s a very think and creamy sauce. Add on a bed on cooked quinoa and serve, listen for the "umph" and "ah". DELICIOUS!

I started my day with 46 minutes of Taebo; cardio and strength training(resistant bands). After that I made this delicious smoothie:


Honeydew Heaven:

2 bananas
1/2 bunch of parley (or if any greens of your choice)
1 celery stalk
1/4 frozen honeydew melon
2 cups of water

I love parsley because it does wonders for my skin and it 'wakes' me up. You can substitute it with lettuce, spinach or kale. Yummy!
I am having a blast with this raw challenge, I swear I never thought I would. I have joined a meetup here in Atlanta and can hardly wait for their next potluck and ofcourse i will contribute--been studying my raw cook books. There are so many raw deserts I can make to satisfy my sweet tooth. This is just too good.

Like so many people, I have been confused for so many years about health. I had too many questions that had several different answers hence my yo-yo dieting effect.
